A staple Indian comfort food, kitchari is a highly digestible porridge or grain cereal made traditionally made with rice and lentils. Kitchari is a staple in Ayurvedic Detox programs like Panchakarma cleanses. I might also add, this traditional porridge has its counterpart adaptations throughout the Middle East, known as kushari in Egypt or mujadderah in Lebanon or Palestine. Good things catch on, and our ancestors knew a great deal about culinary goodness. Kitchari is an incredible breakfast staple. To your health!
